Strawberry Vegan Tiramisu

A delicious take on the classic Tiramisu - made with strawberries, rice cakes and yogurt + protein powder for a high protein, low carb dessert or breakfast.

Strawberry Tiramisu that’s high in protein and only takes 5 mins to make??

This was such a fun trend that I HAD to get in on! 

you know we gotta put our own twist on it over here - so we’re making it even MORE flavorful and MORE over the top (I mean look at this thing it’s literally oozing overboard! ) by decking it out with a sumptuous strawberry sauce! 

And we have the best of the best California Giant Berries strawberries creating a full blown strawberry tiramisu extravaganza. 

Go ahead and stew down these California Giant Berry Strawberries and watch as they melt into a pool of delicious sweetness, creating a simple sauce that levels Up the creamy vanilla yogurt filling. 

And while you’re at it, let’s swap out the lady fingers for rice cakes, and add a little protein powder into the vanilla yogurt for good measure.

Strawberry Rice Cake Tiramisu:

Makes 1

4 rice cakes

1 cup coffee

1 & 1/2 cups plain yogurt 

1 scoop vanilla protein powder

1 cup California Giant Strawberries, quartered

Juice of 1/2 orange and zest

1 tbsp cacao powder 

Start by making the strawberry filling by adding the strawberries and orange juice into a saucepan to cook on medium-high heat for 5-8 minutes, or until the strawberries have cooked down and released their juices. Pour the sauce into a bowl and set aside. 

In a mixing bowl, mix together the yogurt and vanilla protein powder. Set aside.

Pour the coffee into a dish and dip one side of the rice cake into the coffee, flip and dunk the other side. 

Now add a heaping tablespoon or two of the yogurt and speed evenly on top of the coffee dipped rice cake. 

Add a heaping tablespoon of the strawberry on top of the yogurt and spread evenly. 

Repeat the process 3x more, and at the final layer of the tiramisu, top the yogurt with cacao powder and a few strawberry slices.

Eat immediately and enjoy!
