A Granola Fruit Parfait

A delicious and quick breakfast fruit parfait is made in minutes - layer crunchy granola, smooth coconut yogurt and homemade stewed fruit for a stress-free morning.

Granola, coconut yogurt and fruit on their own are excellent breakfast choices but when combined, make for a quick yet indecently delicious breakfast. Speedy breakfasts take on a new appreciation post-university days. The way I’ve come to depend on easy breakfasts veers close to the way Khaleesi needs her dragons to take the throne (GOT fans will get this one). Keeping things simple, layer crunchy granola, coconut yogurt and top with a heaping scoop of stewed fruit.

This stewed fruit is hands down the best part of the three layered parfait. The convenience of frozen fruit, sweetened with just a dollop of honey, makes a sweet, homemade viscous fruit sauce. I love to make the stewed fruit in bulk (double the recipe) and save for later. It’s delicious atop oatmeal, scones, pancakes and toast with nut-butter! Dipping into the parfait and tasting the delicious textures of crunchy granola and smooth yogurt keeps this breakfast not only interesting but also utterly delicious. The ideal breakfast as you can prepare the night before – taking one with you as you walk out the door for work or university. If you are pressed for time, struggle to find a satisfying breakfast or just want to change it up – try this – it will make your life a little easier, while adding a touch of goodness to your mornings – and we all need a little of that from time to time.

Serves: 1

Prep Time: 5 minutes | Cook Time: 10 minutes

Ingredients for the Granola and Fruit Parfait:

- 3/4 cup of my cinnamon and raisins granola

- 1/2 cup yogurt (I used coconut yogurt)

- 2 1/2 cups of frozen fruit (I used peaches and strawberries)

- 1 1/2 tablespoons honey

- 3 tablespoons water

Instructions:

For the stewed fruit - simply run the frozen fruit under hot water until they soften, about 1 minute. Then add the fruit, water and honey into a small saucepan. Cook this on medium heat with the lid on for 10-15 minutes until the water reduces and the fruit soften but still hold their shape. Then simply layer first the granola and then the yogurt into a mason jar or bowl. Top with the stewed fruit. Store the remaining stewed fruit in an airtight container in the refrigerator for up to 3 days. Enjoy!
