Sweet Potato and Guacamole Wraps

A simple lettuce wrap stuffed with sweet potatoes, black beans, spices and fresh guacamole. Only taking 20 minutes to make while offering up a delicious and filling weeknight meal.

Last week a friend mentioned that I haven't posted a dinner/lunch recipe in a while. All I could think was ya, I've been really into smoothies. But I haven't gravitated to a wholesome meal in ages. So with that in mind and being a bit too busy to make a long, hour filled, gourmet meal (who really has time for one of those?), I leave you with this - a simple butter lettuce wrap stuffed with sweet potatoes, black beans, spices and fresh guacamole. 

Keep weeknight meals simple by making a wrap that is quick yet hits you with a satisfying finish. So much so that by the end of 3 wraps you are fully content and deliciously stuffed with sweet potato goodness. The guacamole adds a touch of tang that mellows the spicy sweet potatoes and black beans. A cinch to whip up, tossing nearly all ingredients into one pan and cooking for 15 minutes. You are left with a beautiful dish, saturated in layers of flavors and colors.

Serves: 5-7 wraps

Prep Time: 10 minutes | Cook Time: 20 minutes

Ingredients for the Sweet Potato Wraps:

- 1 large sweet potato

- 1 can of black beans

- 1/3 can of corn

- 1 head of butter lettuce (or romaine)

- 1 teaspoon cumin

- few dashes of chili flakes

- 1 avocado

- Juice of 1/2 a lemon

- 1 tablespoon cilantro

- salt

- 2 tablespoons olive oil

Instructions:

Start by cutting the sweet potato into small bite size pieces. In a medium saucepan on medium heat, warm the olive oil, cumin, chili flakes and few dashes of salt for 3 minutes. Then throw the sweet potato in and add a few tablespoons of water. On medium heat, keep stirring until the sweet potato pieces are tender – about 15 minutes. While this is cooking make the guacamole. Simply smash the avocado with the cilantro, salt and lemon juice.

Once the potatoes have cooked, add in the beans and corn and warm for a few minutes. Now prepare your wraps by dolloping the veggies into the wraps and top with guacamole.
