Steak Taco Bowl

Serves 1 (w/ leftovers)

For the Pineapple and Sweet Pepper Salsa:

1/2 cup pineapple, cut into small chunks 

1/2 cup Sunset Wild Wonder Mini Peppers, roughly chopped 

Few slices of pickled red onions

Pinch of sea salt

Squeeze of lemon juice 

For the Steak:

1 tbsp butter or olive oil

4oz thin cut steak

Dash of paprika

Dash of cumin 

Squeeze of lime juice 

Sea salt 

Assemble the Taco Bowl With:

1 cup any rice, cooked (I’m using green bamboo rice)

Any lettuce (I’m using butter lettuce)

Chopped avocado or guacamole 

Start by making the pineapple salsa by mixing all the ingredients in a bowl and set aside. 

Cook the steak by melting the butter in a sauce pan over medium-high heat. Add in the steak and cook on both sides for about 5 minutes (temp anywhere over 130F) - before you turn the steak add a dash of paprika, cumin, lime juice and sea salt to each side. Once the steak is cooked, remove from the heat and let rest for a few minutes. Now cut the steak into thin strips like you see here.

To assemble to bowl - add a generous portion of the rice to one side, add in a large scoop of the salsa, all the steak, a few slices of lettuce, the chopped avocado, and then top with extra cilantro. Enjoy!
