Roasted Tomato and Garlic Toast

Roasted Tomato and Garlic Toast is a delicious breakfast that is packed with flavor. Also a great way to use up any leftover summer tomatoes.

Wow, does it feel good to be in a place I've never been before! For some reason I didn't have the spark to travel to Spain until recently and my god, I've only been here 24 hours and I'm blown away. The people, the location, the beauty, the foods, the sangria, the beach, I mean the beach. I'm never going to want to leave this place. 

I'm a bit jet lagged and all I'm craving right now is this simple tomato and garlic toast. It's an easy one and I hope you guys give it a go as soon as you get your hands on a juicy summer tomato. The most satisfying part is cutting open the blistered tomato and having the juices spill all over the toast. Just delicious.

Serves: 2

Prep Time: 5 minutes | Cook Time: 25 minutes

Ingredients for the Roasted Tomato and Garlic Toast:

- 2 slices of rye bread (or any you’d like)

- 4 tablespoons of yogurt or cashew cheese (recipe here)

- 2 large tomatoes

- chili flakes (optional)

- 1 garlic clove

- sea salt

- olive oil

Instructions:

Preheat your oven to 400F. Line a baking tray and add the tomatoes into the oven with a drizzle of olive oil. Once the tomatoes have softened and blistered on top (see photo), about 25 minutes, remove from the oven and make your toast. Toast your bread and then take 1 sliced garlic clove and run the clove all over the toast. We are infusing the toast. Now add a layer of either yogurt or cashew cheese to the toast, then the tomato, chili flakes, drizzle of olive oil and sea salt. And add an avocado to make it more of a meal. Enjoy!
