A delicious and healthy yogurt bowl, with stewed cherries and apricots, that you can make in advance for a quick breakfast or snack! Pair it with this citrus granola for a filling topping! Both recipes below.

Hey guys! I just wanted to pop in this Saturday morning with a pretty speedy recipe that will get you out of the kitchen quicker because it’s nearly summer and I have a feeling we’re all wanting only delicious fuss-free recipes so that we can get on with our weekend plans. And as I’m writing this, I’m having the last bits of granola that I prepared on Sunday night. I’ve managed to eat this breakfast nearly everyday this week and still have some leftover granola for the weekend. This is definitely a recipe to have on hand if you know your week might be a little mad. Just prepare everything the night before, have some fresh yogurt on hand, and your weekly breakfast is set. Now I got to run as it’s my sister’s bridal shower in 2 hours and somehow even with this quick recipe, I’m running a bit late…At least breakfast is taken care of.
Prep Time: 10 minutes | Cook Time: 17 minutes
Ingredients for the Stewed Fruit:
- 1 cup pitted cherries
-1 cup pitted apricots
- drizzle of honey or maple syrup
- 1 teaspoon vanilla powder
- 2 tablespoons of water
- Plus 2 cups yogurt (I like coconut yogurt)
Ingredients for the Citrus Granola:
- zest of 1 orange
- 1 huge tablespoon cashew butter (optional)
- juice of half the orange squeezed over the mixture
- handful of raw pumpkin seeds
- 1 tablespoon vanilla powder
To make the stewed fruit use the instructions in this recipe. Note: this stewed fruit will be thicker and not as traditional as a thick stew.
To make the granola use this recipe and add in the additional ingredients once everything has been tossed into a big bowl before cooking in the oven. But go ahead and add the vanilla powder and cashew butter to the melted honey and coconut oil mentioned in the other recipe.
Top the yogurt with the stewed fruit, granola and enjoy!
