A delicious veggie and soba-noodle miso soup that cooks in 15 minutes. A quick soup that's easily made in bulk, perfect for a busy work week.
Ever have those weeks you just can't shake? The ones that just keep dragging on? Despite coming back from a holiday that had all the fixings of relaxation, I was tired come Thursday. So what to do when you're tired? Watch a movie of course. And choose a long one that occupies 3 hours of your day. Then wait 48 hours until your movie rental expires, rent it again and watch it one last time. This is what I did with Inception. I love this movie more than I will be able to explain here. And at this point I am On Demands favorite customer - comfort over figuring out where to buy a DVD in this day and age, right? And what else do you do on a lazy weekend when the first chill of Autumn swells the air? You make soup and watch Inception with your sister. And if your sister's fiance isn't sold on the whole concept of a dream-within-a-dream? You promise to explain the movie in 15 minute intervals, making a 3 hour movie a 4 hour one. And now I've gone on way to long about Inception. Now for the soup...
This is an easy soup. One that is balanced with crunchy broccolini, snap peas and slices of mushroom and zucchini that work with the noodles to soak in all the miso flavor. Now with all that extra time left over from cooking a quick soup, go ahead and watch Inception one last time. I promise I won't tell :)
Prep Time: 10 minutes | Cook Time: 15 minutes
Ingredients for the Veggie Miso Soup with Soba Noodles:
- 8 cups water
- 3-4 tablespoons miso paste
- 2 garlic cloves
- 1 teaspoon chili flakes
- 3 heads of bok choy
- 1 cup mushrooms
- 2 zucchini
- 1/2 packet of soba noodles (I like the buckwheat version)
- 1 head of broccolini or 1/2 head of broccoli
- 1 cup snap peas
- 3 green onions
- sprinkle of sea salt
On high heat, bring the water mixed with the miso paste to a boil. In the meantime cut all your veggies into large bite sized pieces (shown above). Once the water is boiling, lower to medium heat and add the zucchini, broccolini, roughly chopped garlic and chili flakes, and cook for 10 minutes. Then toss in the remaining ingredients - the mushrooms, bok choy, soba noodles and snap peas, and cook for 5 more minutes. Then top with fresh cilantro and sliced green onions!
I hope you guys love this recipe as much as I do! And same goes for Inception! And if any one can answer why Leonardo di Caprio doesn't age when Seito does at the end, I would be eternally grateful. It plagues my mind :)
