Take creamy almond butter, add a little almond flour, roll it into a ball and you’ve got yourself an upgraded, peanut butter cookie. These cookies, alongside chocolate chips, are the quintessential American dessert. I beg you to remember a childhood birthday party that wasn’t stocked high with these goodies. In the past, I’ve found peanut butter cookies to be a bit too sweet or stale and often leave me with stomachaches. Instead, these no-bake, raw almond-butter cookies feed me with energy, thanks to the protein rich nut-butter, and  always keeps a gooey, soft center!

Giving this classic a twist: fill it with almond butter, sweeten with date syrup or honey and top with sea salt. This recipe is ideal for those baking impaired cooks out there because there is no baking involved! It only takes 4 ingredients to make – ones that often fill your cupboard – almond butter, almond flour, date syrup or honey and cinnamon. A creamy raw cookie that only requires you to taste as you go. If you like it really nutty, add another tablespoon of nut butter; if you’re like me and are highly addicted to sweets, go ahead and add a little more date syrup or honey. This recipe is great - simple enough to make on the fly and one that definitely satisfies that sweet craving.

Serves: 10 cookies

Prep Time: 5 minutes | Freeze time: 30 minutes

Ingredients for the No-Bake Almond Butter Cookies:

- 3/4 cup almond flour, or oat floar

- 1/4 cup almond butter

-1/4 cup unsweetened coconut flakes

- 1 teaspoon cinnamon

- 2-3 tablespoons maple syrup

- 1 tablespoon almond milk or water

- sea salt

Ingredients:

 Simply place all the ingredients into a food processor and mix until combined and creamy, about 1 minute. Now let the dough set in the refrigerator for 30 minutes to harder. Then scoop out a teaspoon amount of the dough and roll into a ball with your hands. Use the back end of a fork to press the cookie ball down into a flat circle. Sprinkle with sea salt, coconut flakes and enjoy! Store in the refrigerator to keep fresh and delicious.
