Post Thanksgiving Cleanse: Overnight Coconut Chia Seed Pudding

After overindulging in the first wave of holiday meals and sweets, my body has been craving simple foods that can be made in no time at all.  This has been one of my favorite recipes over the last year.  If you are trying to transition into a healthier diet, this delicious Overnight Coconut Chia Seed Pudding is such a fantastic introductory meal!  It really shows how simple and easy it can be to eat healthier – it doesn’t have to be confusing, time consuming, pretentious or expensive.  This chia seed pudding recipe only has 3 main ingredients - chia seeds, coconut milk and honey!  When I started to change my diet, I was pretty obsessed with chia seed pudding with almond milk but then I switched it up and tried it with coconut milk this summer – oh my god, it is heaven!  Just so absolutely creamy and rich!  The coconut milk adds a sweet, tropical taste that makes you feel like you’re on holiday.  The creamy coconut milk covered in sweet honey and cinnamon creates a beautiful flavor that the chia seeds soak up!  The best part about chia seed pudding is that you can make it in advance, store overnight and then pop it into your lunch bag to enjoy wherever you are.  It only takes a few minutes to mix all the ingredients together and then you are done! 

The beauty of this simple meal is how the chia seeds work - they are why you are able to stay full after enjoying this for breakfast, lunch or a light dinner!  Chia seeds have a very special ability to expand 12 times their weight in liquid – this allows us to stay full as it expands in our stomachs.  Chia seeds are also a wonderful source of fiber as 2 tablespoons gives 10g of fiber, nearly half of your daily requirement!  Fiber is one of the most important elements in your diet as it is the main way of excreting waste and toxins from you body, so its important to eat around 25-35g of fiber each day.  This alongside the endless health benefits of coconut milk will keep you full and filled with superfoods all day long!

Serves: 1

Prep Time: 5 minutes | Cook Time: Overnight or at least 1 hour

Ingredients for the Overnight Coconut Chia Seed Pudding:

- ¾ cup unsweetened coconut milk

- 3 tablespoons of chia seeds

- 1 tablespoons honey

- 1/2 teaspoon cinnamon

- top with any fruit

Instructions:

Start by stirring your coconut milk making sure you mix the liquid well.  Then add the coconut milk, chia seeds, honey and cinnamon to a small bowl and mix well.  Then simply place the chia seed pudding into the refrigerator to expand and settle overnight or for at least 1 hour.  Top with any fruit, store in an airtight container (I use a mason jar) and take to work or university to enjoy!
